Vegan One Pan Cilantro-Lime & Rice with Black Beans

Besides being an incredibly easy dinner this dish is hearty, delicious and healthy. You will love that it’s cooked in (mostly) one pan because, hey, it’s less to clean up after you’re done. As a mom I appreciate any less mess that’s possible.

Now I made this dish toddler friendly, meaning we didn’t add in anything spicy. You can add in peppers, chillies, really customize it and give it a kick.

(Vegan) One Pan Cilantro-Lime ‘Chicken’ and Rice with Black Beans

Prep Time: 45 minutes *15  if you use canned beans
Cook Time: 15 minutes
Total Time:  30 minutes-1 hour*

Ingredients

1/2 cup Beyond Meat vegan chicken strips
1 tbsp canola oil
salt and fresh ground black pepper
2 cloves garlic, finely chopped
1 1/2 cups vegetable bouillon
2 tsp lime zest
3 tbsp lime juice
14oz black beans, rinsed & well drained
2 cups brown rice *can use white
1/3 cup cilantro

Directions

Heat oil in a large skillet over medium-high heat. Add vegan chicken, season with pepper & salt and sauté until thoroughly cooked. Add in your garlic once sautéed (about 8 minutes) and let sit. Stir in your vegetable bouillon, lime juice, lime zest, and black beans. Season with salt & pepper to taste. Allow the mixture to come to a boil, add your rice and let boil 30 seconds. Immediately remove from heat and cover with a lid for 10 minutes. *If you have excess moisture, return to heat and toss for 2-3 minutes. Remove from heat, toss in your cilantro and let rest.
